Though bereft of screens or temperature readouts, the Zalman ZM-MFC1 is an excellent fan controller.
It allows control of six fans in total. Rheostats control four of these fans, and if your fans have a speed monitor wire an LED represents the speed of each. The final two fan controls have three settings: 12V, 7V, and off. You have to screw the bare wires to the back of the switch, as you would wire a plug, which means you have to strip the wires and remove the original connector. Because it's such a simple design it's also easy to use, and it looks nice too.
